The wine that started it all is mineral driven with seashell, and stone. The fruit is light apricot, traces of wildflower pollen and lemon blossom. Perfectly integrated with a long, honeydew finish.
I know these are strange descriptors but they really do sum up this incredibly complex and thoughtful wine. I am the #1 fan of this wine.
This fruit is hand picked by Andy and Mabel. It is fermented cold in stainless tanks and then aged 5 months in a combination of neutral oak and stainless barrels. Malolactic fermentation was inhibited.
