De-freaking-lightful. This wine is what we call turpenic. That means it has high levels of terpenes, which are volatile compounds which bring to life the super tasting trifecta of fruit, floral and herbal. What this means is that you get a nose full of fresh peeled orange, peaches, sage, and white flowers on the nose. The palate is super dangerous, flinty and waxy and refreshing. Our decided pairing with this was Japanese egg custard with dashi and microgreeens topped with a touch of trout roe. It was also called a panty dropper. Either way, this wine is delicious.
The grapes for this wines were hand picked, whole cluster pressed, barrel fermented with native yeasts in neutral French oak and aged 8 months sur-lies. No fining or filtering, so vegan.
