This wine is very light and so pretty. If dusty rose had a flavor, this would be it. Rose petal, plum, and that moment when you pick a blackberry and then wish you had given it just one more day. The palate has strawberry, stone fruit and fresh herbs. Such a lovely Chinon style Cab Franc- food friendly and refreshing.
These grapes were hand-harvested on October 4, 2018, de-stemmed and fermented on the skins for 20 days with native yeast. The wine was then gently pressed and racked into neutral oak barrels to age for nearly two years.
