Honestly if all Cab was like this, I would drink it more often. This wine is broody and proper with so much aging potential. It should be by the glass at every restaurant if you want to show what good Napa Cab can be. But it’s not Napa, its Sonoma. So it costs half the price and overdelivers every step of the way. 

This wine opens with red and black fruit, fig, dried herbs, and mocha. On the palate find espresso, more black and red fruit, and just a kiss of leather. The tannins are integrated and broad. This wine is so well made and so enjoyable and just really how Cab should be. 

Give this a good decant and see what she can do! 

This wine was fully de-stemmed and aged in 50% new French oak. The final blend was 81% Cab Sauv, 13% Merlot, 6% Syrah.  This wine was unfiltered and fined with bentonite, so vegan. 47 cases produced.

Knights Valley is long known as Cab country. Most of the 2000 acres planted in the AVA are Cabernet, followed by the supporting Bordeaux cast of characters. The well drained soil is referred to as “moon dust” because it is so fine grained. Knights Valley is temperature wise most similar to Calistoga, super hot and super cold with not must in the way of moisture influences. The resulting Cabernets are naturally intense with big fruit notes and big chewy tannins.
