A totally serious winelover geek wine. This wine has pecan sandies and apricots on the nose. Lots of salty minerality with crispy apple and chamomile tea. This wine is set up for ageworthiness for sure.
The red(!) grapes were hand harvested and gently whole-cluster pressed to prevent color extraction. The juice was transferred to a stainless steel tank for the beginning of primary fermentation. After yeast were established, the juice was transferred to a 3-year-old medium toast Vernou French oak barrel to complete fermentation. This process took place over 3 weeks at 60˚F. After primary fermentation was completed, the wine was inoculated to encourage partial malolactic fermentation (~40%). During malolactic the lees were stirred bimonthly to create more texture and density. The wine was then racked off the lees, sterile filtered and bottled on January 25, 2021.
