This is some Mohammed Ali wine – a force, but light on its feet. Luscious, spicy, and juicy this wine is bing cherry, cassis, blackberry and a cherry flavored snow cone in the summer. The final tasting note we had for this wine was: YUM. 

The grapes for this wine were hand picked and fermented with native yeast- 30% whole cluster, and partial
carbonic fermentation. Additionally co-fermented with 1% white wine must for smoothness and aromatics. The wine was gently pressed after fermentation and aged in neutral french oak for 8 months without racking. No fining or filtering, so vegan.

2020 Doctor’s Orders Barbera

This Barbera is from Paso Robles Highlands vineyard. It is the same vineyard as the Malvasia. Hot climate during the day, very cold at night, because of its elevation, and Barbera naturally has some pretty high acidity. With this variety I feel like we need to be more concerned about balance than just being light. While we make European style wines, in some respects, I didn’t want this to fall out of balance. It was picked at a pretty high Brix and then we fermented it carefully to not get too much extraction. I felt like that balance worked out quite nicely.”
