Chenin Blanc is really the archetype of white wine. Medium in body, this wine has really got it all- dried flowers, gruava, lemongrass, green strawberry, and oyster shell on the nose. The palate is opal apple, toast with quince paste, white tea and miso. This wine is a delight and reminds me of the golden hour, when everyones got the gloam on the them.
This wine was partially foot tread and macerated on the skins for six hours. It was then whole cluster pressed and enjoyed native fermentation in neutral French oak barrels. It was aged five months on lees. Battonage was performed on a regular basis until the desired mouthfeel was achieved. It was bottled unfined and unfiltered, so vegan.
